We are pushing our health standard to an even higher level - all cookies are baked at 120C to limit the occurrence of acrylamide (a carcinogenic substance that occurred in foods with high starch content when heated above 120C)!
Low-temperature baking also preserves the taste of our ingredients, making our cookies more flavourful.
120C Low-temperature Baking
We use 120-130C and a much longer time (1 hour to bake each cookie!) to produce these lovely goodies that are truly healthy.
Why do we set the temperature at 120-130C?
Because when the temperature exceeds 130C, acrylamide begins to form in foods with high starch content. The occurrence will be much greater if the temperature is above 160C.
