The Classic Hong Kong-Style Borscht Soup
Borscht is a kind of sour soup made from beetroots and vegetables, which originated in Ukraine and is very common in Eastern Europe.
When borscht soup was first introduced to the Chinese, people don’t like the sour taste of the beetroots and beetroots are difficult to grow in northern China. Later on, the Chinese used tomatoes and tomato paste instead of beetroots to make this soup which gives a similar bright red color!
This has become the Hong Kong-style borscht soup, also called luo song tang (羅宋湯). In Chinese, luo song (羅宋) means Russian. So this soup can also be called Chinese-style Russian borscht soup.
