The reason for using so much sugar is that manufacturers want to cover up the taste of their gluten-free flour blends.
How to create a perfect gluten-free flour blend is like an art and requires effort and time. We are devoted to investing the time to give you the best results that can be enjoyable to everybody – even those that used to eat wheat-based products.
In the process of developing the muffin pre-mix, we realized the importance of finding the right portion of protein and starch, so can give a tasty and moist cake texture.
After many times of experiments, we found the best muffin recipe with the ancient grain teff!

Nutritious Grain – Teff
Made with ancient grain, Teff, which is rich in iron. Teff makes the muffin become flavourful, just like the taste of wheat and nuts.
You can also pair with different ingredients to create a variety of delicious muffins!
Simply add cacao powder to turn this into yummy chocolate muffins!
No chemical additives
No nasties! We don't add any preservatives and chemical emulsifiers.

How to use
1) In a bowl, add muffin pre-mix, 58g sugar (or 38g monk fruit sweetener), 50g oil, 150g water & 4g vinegar.
(Sugar: May use cane sugar, coconut sugar, sweetener, etc.)
(Oil: May use any edible oil e.g. camellia oil, olive oil, etc.)
(Vinegar: May use white vinegar, rice vinegar, or apple cider vinegar.)
2) Mix all ingredients well. You may fold in dried fruits, nuts, etc. at this stage.
3) Pour to muffin cups or mold until 90% full.
4) Put into pre-heated oven & bake for 23-25mins at 180C.
If you added fresh fruits, extend the bake-time to 28-30mins. The muffins can also be cooked by steaming. Once the water is boiled, put in & steam for 25 mins with medium-low heat.

How to store the muffins
Since no preservatives are added, it is recommended to store in the refrigerator 0-4C after baking if you cannot finish them on the same day. You can also make a batch and keep them in the freezer -18C for up to 3 months.
It is normal for the muffin to become stiff after cooled down, especially after placing in the fridge. You can reheat the muffin before consumption: Microwave at 900W for 30+30 seconds, or bake at 180 degrees for 10-15 minutes, or steam for 5 minutes.
